You may have heard of food allergens, however, do you know what they are? The FSANZ Food Standards Code describes an allergy as: “A food, food ingredient, or component of ingredient that can cause a severe adverse reaction in some individuals”. Unfortunately, Australia has one of the highest rates of food allergy in the world, with between 5-8 percent of children and 2 percent of adults that have an allergy to one or more food ingredients.
